  • 3 tablespoons chia seeds
  • 3 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1-2 tablespoons maple syrup
  • 1/2 teaspoon pumpkin pie spice (or 1/4 tsp cinnamon, pinch nutmeg, pinch ginger)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: pumpkin seeds, chopped pecans, granola

Instructions

  1. Whisk together milk, chia seeds, pumpkin puree, maple syrup, pumpkin pie spice, vanilla, and salt until smooth.
  2. Pour into jars or bowls and refrigerate.
  3. After 30 minutes, stir once to prevent clumping.
  4. Refrigerate for at least 4 hours or overnight.
  5. Top with pumpkin seeds, pecans, or granola before serving.

Notes

Use pure pumpkin puree, not pumpkin pie filling which contains added sugar and spices. The pudding will be thicker than other varieties due to the pumpkin. Add a splash of milk if too thick. Keeps for up to 4 days refrigerated — your gentle breakfast ritual, ready when you are.
