Seasonal favorite, healthy version, ready in 15 minutes
These pumpkin spice bites bring fall's favorite flavor in snackable form. All the PSL vibes without the coffee shop.
What you need
- 1/2 cup pumpkin puree
- 1 cup rolled oats
- 1/2 cup pecans
- 1/4 cup maple syrup
- 2 tablespoons almond butter
- 1 teaspoon pumpkin pie spice
- Pinch of salt
How to make it
- Add all ingredients to food processor
- Pulse until combined and sticky
- Roll into small balls
- Optional: roll in cinnamon for extra spice
- Refrigerate for 30 minutes
- Store in the fridge for up to 1 week
Why this works
No baking, pure fall comfort. The pumpkin adds moisture and flavor, while the spices make it cozy. Perfect for autumn snacking from September through November.
Practical tip: Use pure pumpkin puree, not pie filling. The mixture will be wetter than other bites - that's normal. These taste like pumpkin pie.
