Ingredients
- 2 cups cooked chickpeas
- 1 cup cooked brown rice
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 3 tablespoons creamy tahini dressing
- Fresh parsley for garnish
- Avocado (add fresh daily)
Creamy Tahini Dressing
- 1/4 cup tahini
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 1 teaspoon cumin
- Water to thin
- Salt and pepper
Instructions
- Cook chickpeas and brown rice in batch. Let cool.
- Prep vegetables: dice cucumber, halve tomatoes, slice onion.
- Make dressing: whisk all ingredients until smooth and creamy.
