These pineapple mint cubes bring instant freshness to your water, iced tea, or cocktails. The pineapple adds natural sweetness, the mint keeps it cool and crisp.

What you need

  • 1 cup fresh pineapple chunks
  • 1 handful fresh mint leaves
  • 1/2 cup water or coconut water
  • Optional: a squeeze of lime

How to make it

  1. Roughly chop the pineapple into chunks
  2. Wash the mint leaves
  3. Blend pineapple, mint, and water until smooth
  4. Add lime juice if using
  5. Pour into ice cube trays
  6. Freeze for at least 4 hours
