- 1/4 teaspoon vanilla extract
- Pinch of salt
- 1 ripe peach, sliced
- Optional: chopped pistachios or almonds
Instructions
- Whisk together milk, chia seeds, maple syrup, grated ginger, vanilla, and salt.
- Pour into jars or bowls and refrigerate.
- After 30 minutes, stir once to prevent clumping.
- Refrigerate for at least 4 hours or overnight.
- Before serving, top with fresh peach slices and optional nuts.
Notes
Fresh ginger provides the best flavor, but ground ginger works in a pinch. Start with less ginger and adjust to taste. Frozen peaches work well when fresh aren't in season — thaw before using.
